Jaggery & Coconut Stuffed Parathas

Preparation Time: 15-20 minutes (including dough resting)

Jaggery and Coconut Stuffed Parathas are a delightful Indian flatbread, perfect for a sweet treat or dessert.

Ingredients:

  • 1 cup grated jaggery
  • 1 cup grated fresh coconut
  • 1 tsp cardamom powder
  • 1 tbsp chopped nuts (optional, like almonds or cashews)
  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • Water (as needed to knead the dough)
  • Ghee or oil (for roasting)

Method:

  • In a mixing bowl, add the whole wheat flour and salt.
  • Gradually add water and knead into a soft, smooth dough.
  • Cover and let it rest for 15-20 minutes.
  • In a pan, lightly toast the grated coconut for 2-3 minutes.
  • Add grated jaggery to the coconut and cook on low heat until it melts and combines well with the coconut. Stir constantly to avoid burning.
  • Add cardamom powder and mix well. Optionally, add chopped nuts for extra texture.
  • Remove from heat and let the mixture cool.
  • Divide the dough into equal-sized balls.
  • Roll each ball into a small circle, place a spoonful of the jaggery-coconut filling in the center, and fold the edges over the filling to seal it.
  • Gently roll the stuffed ball into a flat disc, ensuring the filling doesn’t come out.
  • Heat a tawa (griddle) over medium heat and cook the rolled parathas, adding a little ghee or oil on both sides.
  • Cook until golden brown and crisp.
  • Serve warm, drizzled with ghee if desired, alongside curd or as is.
