Gur Aur Aate Ka Halwa (Jaggery and Whole Wheat Flour Halwa) is a traditional Indian dessert, made with jaggery, whole wheat flour (aata), ghee, and nuts.
Ingredients:
- 1 cup wheat flour
- ½ cup jaggery, grated or finely chopped
- ½ cup ghee (clarified butter)
- 2 cups water
- ¼ teaspoon cardamom powder

Method:
- Prepare the Jaggery Syrup: In a saucepan, heat 2 cups of water and add the jaggery. Stir well until the jaggery dissolves completely. Once dissolved, strain the syrup to remove any impurities, and set aside.
- Roast the Flour: In a heavy-bottomed pan, heat the ghee. Add the wheat flour and roast on low to medium heat, stirring continuously. Continue until the flour turns golden brown and releases a nutty aroma. This can take around 8-10 minutes.
- Combine with Jaggery Syrup: Gradually add the jaggery syrup to the roasted flour while stirring continuously to avoid lumps. Be cautious as it may splatter.
- Cook the Halwa: Keep stirring until the halwa thickens and begins to leave the sides of the pan. Add cardamom powder and mix well.
- Garnish and Serve: Once done, garnish with chopped nuts if desired. Serve warm.
