Jaggery and Coconut Stuffed Parathas are a delightful Indian flatbread, perfect for a sweet treat or dessert.
Ingredients:
- 1 cup grated jaggery
- 1 cup grated fresh coconut
- 1 tsp cardamom powder
- 1 tbsp chopped nuts (optional, like almonds or cashews)
- 2 cups whole wheat flour
- 1/2 tsp salt
- Water (as needed to knead the dough)
- Ghee or oil (for roasting)
Method:
- In a mixing bowl, add the whole wheat flour and salt.
- Gradually add water and knead into a soft, smooth dough.
- Cover and let it rest for 15-20 minutes.
- In a pan, lightly toast the grated coconut for 2-3 minutes.
- Add grated jaggery to the coconut and cook on low heat until it melts and combines well with the coconut. Stir constantly to avoid burning.
- Add cardamom powder and mix well. Optionally, add chopped nuts for extra texture.
- Remove from heat and let the mixture cool.
- Divide the dough into equal-sized balls.
- Roll each ball into a small circle, place a spoonful of the jaggery-coconut filling in the center, and fold the edges over the filling to seal it.
- Gently roll the stuffed ball into a flat disc, ensuring the filling doesn’t come out.
- Heat a tawa (griddle) over medium heat and cook the rolled parathas, adding a little ghee or oil on both sides.
- Cook until golden brown and crisp.
- Serve warm, drizzled with ghee if desired, alongside curd or as is.
